Easy Weeknight Taco Bowl

Eating healthy during the week can be a challenge that's why quick meals are a go-to. Nothing too fancy but also not sacrificing flavor.

Ingredients:

  • chopped red and orange peppers

  • chopped red onion

  • chopped avocado

  • chopped spinach (what I had on hand)

  • black beans

  • corn

  • salsa

  • ground turkey

  • packet of taco seasoning ( I always look for seasonings with simple ingredients)

  • Seeds of change microwaveable rice

Directions:

  • In a pan over medium heat, cook ground turkey. Add in taco seasoning and let simmer.

  • While the turkey is cooking, chop your veggies and warm up your canned beans and corn (chop more veggies than you need so you can use them later in the week)

  • Heat beans on the stovetop

  • Microwave your rice (per label instructions)

  • Combine and enjoy!
