During COVID, I had lab tests run that revealed I had pre-diabetes. I was pretty shocked, especially because I had always thought I was pretty healthy: drinking my water, taking my supplements, not eating fast food. As a 27 year old who exercised most days, I couldn’t believe that I was on the path to diabetes.
On my quest to figure out more about blood sugar and what a healthy plate would look like, I stumbled on celebrity nutritionist Kelly Leveque. She taught me a lot. Through her work, I realized I wasn’t really building my plate to support healthy blood sugar.
She really taught me everything I know about how to stabilize your blood sugar’s instagram and she helped me understand the basics to a healthy plate.
Kelly prescribes the Fab 4 which includes building your plate with Protein, Fat, Fiber, and Leafy greens, so that’s what I started doing. I also started using a Continuous Glucose Monitor (CGM) through Levels, to see how my food choices were affecting me. In about 6 months, I was able to bring my blood glucose levels back into the healthy range

How to turn any old recipe into a better for you version
After realizing that most of my sweet treats were sending my blood sugar through the roof, I knew I needed to make some tweaks so I didn’t have to sacrifice the desserts I know and love. The key to transforming any recipe is to figure out how to add more protein, reduce sources of carbohydrates, and look to add in healthy fats and fiber.
It definitely takes some experimenting, but that’s part of the fun.
For protein: I love adding the Be Well By Kelly Unflavored protein powder to my meals.
For fats: Melted coconut oil is GREAT for baking, coconut cream or coconut milk is another favorite for recipes like overnight oats or chia pudding. Nut butters are a great source of fat too.
For fiber: Sunfiber is a great way to add in fiber without the taste. You could also add in flax seeds, zen basil seeds, or chia seeds too.
For reducing carbohydrates: Swap a regular flour for an almond or coconut flour base.

My favorite and OG recipe is my chocolate chip cookie recipe that’s gluten free, dairy free, vegan, refined sugar free and has protein. The protein will help you keep that blood sugar stable - which we know and love.
Without further ado, here’s the recipe.
How to make the BEST chocolate chip cookie recipe that’s gluten free, dairy free, vegan, and refined sugar free
Makes: 12 cookies
Ingredients:
⅓ cup melted coconut oil
1 teaspoon baking soda
1 teaspoon baking powder
2 cups almond flour
1 to 2 scoops BWBK Unflavored Protein Powder
⅓ cup coconut sugar
6 T almond milk (or any alternative milk you have on hand)
1 tablespoon maple syrup
Dairy free chocolate chips - I like the Hu Kitchen, Enjoy life, or Evolved Chocolate brands
2 teaspoons vanilla
¼ teaspoon salt
Directions:
Preheat oven to 350 F
Combine all ingredients into a bowl and mix
If the recipe is really dry, add a little more coconut oil
Use your discretion with how many chocolate chips you want to add
Line baking sheet with parchment paper
Roll dough into balls and place on a cookie sheet
Bake for 9 minutes
They may turn out a big gooey so let them rest until they’re fully cooled off
